The ingredients needed to cook Chicken and Vegetable Noodles:

  1. Use 5 of Boneless chicken breasts.
  2. Prepare 500 g of Noodles.
  3. Take 2 of White onions.
  4. Prepare 3 of Spring onions.
  5. Prepare 1 Punnet of mushrooms.
  6. You need 6 of Carrots.
  7. Prepare 2 of Eggs.
  8. Get 150 ml of Soy sauce.
  9. Get 2 tbsp of Sesame oil.

  12. Use of Sesame seeds.
  13. Prepare 5 of Garlic cloves.
  14. Use of Thumb-sized piece ginger.

Instructions to make Chicken and Vegetable Noodles:

  1. Peel and chop the carrots into small pieces.
  2. Fill a wok with 1.7L water, add the carrots and put on a high heat.
  3. Peel and finely chop the garlic and ginger.
  4. Peel and dice the white onions.
  5. Rinse and chop the mushrooms and the spring onions (keeping whites and greens separate).
  6. Rinse and slice the chicken into thin strips.
  7. In a small bowl, mix together: soy sauce, sesame oil, chili oil, chili flakes and spring onion whites.
  8. In a separate pan, add a little oil and fry the garlic and ginger. Add the white onion and fry until brown.
  9. Add both this pan and the bowl contents to the wok, stir well then add the mushrooms and stir again. Reduce hear to simmer for 5mins.
  10. Add the chicken and noodles, turn the heat back up for 10mins.
  11. Turn the heat off completely, add the spring onion greens. Beat the eggs in a mug then also add these to the wok, stirring constantly.
  12. Serve topped with sesame seeds.
